There's an option available in Settings -> Calls called Always Relay Calls which you can use to ensure that your IP never leaks while making and receiving calls. The default, as you describe, is to trust the people in your contacts with your IP.

I do trust people in my contacts with my IP, but I think we should have control about whether or not we want to share it in a specific moment by doing an interaction (answering to the call)
Why share IP before any interaction from the recipient? I know that CALL DATA cost a lot in bandwidth for the server, but does CALL REQUEST (which i assume is a simple "please answer my call" message sent to the recipient, message that cost almost nothing in bandwidth) needs to be p2p?
I do not see any downsides to the approach i'm proposing, please correct me if i'm wrong
