Personally, I don't use a lot of table styling because (scientific) journals typically limit the allowed styles. Technically, third-party packages must be \usepackaged. I haven't looked up if nbconvert has a hook for including packages but I plan to add support for nicer tables which would require packages like tabu so I will have to figure out how to do that sooner or later.

OK, is that kind of styling not possible in tables without a third party package? I'm not a latex user myself.

Including extra packages from nbconvert probably requires either a custom template, or a raw latex cell in the notebook.

I'll close this issue, open a new one to investigate LaTeX styling, and add notes in the docstring and the example notebook that the styling doesn't currently work with latex.
