Replace the custom --branch CLI argument with core --stage argument.

Also ensure that we don't have forward slashes in our stages by using the following bash replacement pattern:

${THE_BRANCH//\//-}

This will turn something like feature/something-new into feature-something-new.

• main branch should never get seed data and should be seeded with a script initially.
• stage branch should never get seed data as is likely to be replaced from time to time with data from `main.
• All other branches should get seeded with predictable data so that it makes it easier to have predictability.
