You can explicitly set the SDK you want via MACOSX_DEPLOYMENT_TARGET
or maturin options to ensure that it's actually built with the right SDK version.

Thanks, that's really helpful. I guess I hadn't understood previously that MACOSX_DEPLOYMENT_TARGET
would have only affected the output wheel name -- I thought there it had to be exactly the version available from the SDK. Specifically, on my machine, where there is only 13.1 SDK, I thought setting MACOSX_DEPLOYMENT_TARGET=13.0
would have resulted in a failed build because of an SDK incompatibility. Turns out that's not the case. If possible, I think clarification in the documentation could help.
