[FEATURE] Fix the dropdown in SHARPpy-NUCAPS to automatically display most recent data

Is your feature request related to a problem? Please describe.
When NUCAPS is loaded in SHARPpy, nothing displays until the dropdown is clicked but the most recent time is highlighted. This makes the data look unavailable.

Describe the solution you'd like
I recommend to either default to the most recent hour and automatically load the data, so default to an option to "Select date/time."

[FEATURE] Ensure SHARPpy runs on MacOS

Is your feature request related to a problem? Please describe.
The current build files can make a windows executable, but the Mac exe file isn't working.

Describe the solution you'd like
Checkout a mac from the office and troubleshoot why the build file isn't working. Then, update the GitHub actions so that the binary is automatically built.

[FEATURE] Determine why some profiles look different in AWIPS NSHARP and SHARPpy

Is your feature request related to a problem? Please describe.
Some AWIPS profiles look different from NUCAPS, not just at the surface but occasionally in the midlevels. The discrepancies seem to be mostly in WV and less so in temperature. This might be due to a mismatch in NUCAPS version or differences in the mixing ratio and/or Td calculations.

Describe the solution you'd like
Find a profile in AWIPS that looks different than NUCAPS and extract the data into a text file. Compare these values to the SHARPpy input files. I also suspect that the files hosted on UNIDATA's THREDDS website are what is piped into AWIPS. These can also be used to figure out why there are discrepancies.

It would be helpful to see side-by-side plots of AWIPS and NUCAPS native and SHARPpy MR and Td values.
