Could be a update broke snap data or it got interrupted when updating not sure, though you can try
snap revert notepad-plus-plus restore previous snap revision
and you can also start over reinstalling snap with purge removing it.
snap remove --purge notepad-plus-plus
from notepad-plus-plus.
