Demo fails now that Chartjs 2+ has been released
Description
Runtime error when attempting to create the chartjs instance due to the change in chartjs 2+ API
Expected outcome
The demo html to load with the charts rendered
Actual outcome
An empty page with console errors

I've updated the code to work with chartjs 2+ and enriched the demo with all the possible chart types

Not working with Polymer 2.0
Is this suppose to be working with Polymer 2.0?
I created a new app from the cli app template and I'm getting console errors with this. I started to change the underlying code to get things moving, but after spending a just bit of time with this I think it might just be easier to just start from scratch.
Based on the date of issues/pull requests this doesn't seem to be getting much love.
