If I choose your suggestion according to the completely arbitrary criteria of "I like it the best", I will assemble and ship a working raspberry pi sous vide system to you. You pay for the parts and I pay for the shipping (in the US only, sorry!). You'll also be a contributor.

FWIW, even at this early stage performance is extremely good - +- 0.5C from target temperature using a crockpot as the sous vide vessel, which is kind of blowing my mind.

Ideally you'd be moderately familiar with the pi (or at least linux) to make using this easier, but it'll pretty much be "connect to your network, reboot and go to the web interface" simple. I can't promise that every edge will be smooth, but I can promise that it's super hackable and that it works pretty damn well with an analog crockpot or hot plate attached.
