more details about the arctic ice datasets

currently the description of the dataset is a bit overloaded with details. It would be nice to rephrase this and describe how the arctic ice index is calculated and obtained.

improve stub notebook for learners

the current lesson notebook should be extended to yield the rough structure of the video, but without code snippets

learners should type the code from the video at best
