I think I could do it by replacing with regexps, using sed
:
sed -i -r 's/\$([a-zA-Z0-9]+)\$/`\1`/g' filename.md
However I've created small PR to start and see, whether things look better with such change. Anyway our articles often rely too heavy on Latex, so this may not improve things in general, but may seem search results output more readable (as dollar signs are preserved in search results if any).

. Like in the following image. If the variables are part of some formula, it doesn't make much sense to me to write them sometimes in code format:

Well, I tend to agree :) Moreover that now I've found that google made a significant improvement (probably recently) and shows latex properly converted in its search results (unlike bing or yandex).
Then we'd better close this issue! I've rejected the test PR.
