Well figured it out (if it might help people out there one day) :

My board has 8 cores, so it considers each core to be 100%

weirdly with unitary nodes, the given usage is referenced to the 800% full cpu, means a node that displays a consumption of 30% is actually consuming 30*100/800 = 3.75%
-
However when it comes to total usage, it takes all 8 cores as 100%, means if I do the sum of my unitary usages then *100/800, I get the 30% as given.
