The NOOB found the solution himself! So, sorry for bothering.

When I add the following to the bridge (server information and type of communication) everything works as expected

const OSC = require('osc-js') 
const config = {

    receiver: 'udp',
    udpServer: {
        host: '192.168.178.101',  // can also be '0.0.0.0'
        port: 7001,
        exclusive: false
    },
    udpClient: {
        host: '192.168.178.100',
        port: 7001
    }
}
const osc = new OSC({ plugin: new OSC.BridgePlugin(config) })
osc.open()

Although I do not fully understand, when following the suggestion of this thread - i.e. adding "0.0.0.0" as host address of the server - it also works.

I hope someone can save time and frustration with this.
