Default time zome / Current time zone

When I run the demo app, the default time zone is set to America/Chicago. If I set the current time zone to Europe/Paris, in the table below I get the same time value in "Conversions for now in UTC" and "Conversions for now in local time" for the columns "Default" and "Current"
Shouldn't they be different? The Default one in Chicago time zone, and the Current one as it is now. Or am I still misunderstanding something there?
