I'm thinking we should build a demo that's in the domain of our target audience so they immediately see the value.
For e.g.: if our first audience segment is say e-commerce players, then a product search demo would be good.
We could build multiple demos over time that's relevant to each audience segment. For now we can leave the others but the first demo as an exercise to the reader 😁
So the question is what should our first target audience segment be?

It's better to have multiple demos than a single demo because search engines have a lot of overlapping use cases. They should really showcase as much of the breadth of the product as it's the demos that people use as a starting point for all their work. These would also ensure that there are no major bugs or surprises as well (in addition to tests, of course).
