This was something wrong with my import block. The fix was to include the following (present in the gist, again, my error).

use tower::util::ServiceExt;

It was tough to track down because of the relationships between the types; which one implements the future, and then have to import a separate package to have the compiler see that implementation.

Specifically, the future-like behavior is wrapped in the ServiceExt trait:

pub trait ServiceExt<Request>: tower_service::Service<Request> { 
     ...
     fn oneshot(self, req: Request) -> Oneshot<Self, Request>
}

... I was looking for what implements Future where the oneshot namesake exists. I also only looked in tower-http for oneshot... It is in tower.
