The way this has been supported is to set the original binding to false. I see that's a bit clunky if you want to replace a mapping instead of adding another one, so I've added a commit that should do what you want. It detects when you have mapped one of the builtins to a custom key, and removes the default.

I think the bindings could be reordered as you suggest, but the reason I went with this direction is that it allows users to add their own custom keymaps in the same place. I haven't documented this and probably should, but the right-hand-side can be any valid rhs for vim.keymap.set.
