You are looking at the documentation on GitHub? That would be GitHub's rendering of the Markdown and the embedded Mermain diagrams. The same question has come up before, see #5208.

Not trying to be contrary, but I'm confused by this, why aren't any of the other mermaid diagrams on that page showing that functionality?

Mermaid does not provide control box themselves. If you see that on GitHub, it is because GitHub has added their own control box implementation. I see these in GitHub's rendering as well, but this is not a built-in mermaid feature. If you have doubts about it, please check out Mermaid's documentation: https://mermaid.js.org/intro/.
