Hi Chris,
It is certainly possible. Most of what we are doing here is just using the versioning of carrierwave to create different encodings of an uploaded video--a thumbnail/screenshot involves a parameter sent in from the user noting what point in the video to make the capture.
We use a background job to cut the frame with streamio-ffmpeg (the base ruby-wrapper for FFMPEG) and then we save it with carrierwave. Remember to toss out your temp files!

For thumbnails I'm using https://github.com/evrone/carrierwave-video-thumbnailer. It works very good in combination with carrierwave-video.
