Not sure what's happening, but I updated the runpod image. You can try it here. Seems to work fine for me with mistral 7b (takes a bit to start because I added the --load-in-4bit argument).

Welp, I have no idea what I was doing wrong originally, but I copied your template and swapped the model, and it works fine now. Thanks!!
