There is no way to get the actual field types from a built class directly (you can access the reflected namespace though as explained below), but if Test#name is set to null this already means that it has been omitted:

...
var myTest = Test.decode(someBuffer);
if (myTest.name === null) {
   // name has been omitted / is not present in the byte stream
}
...

It's also possible to get a list of all fields to iterate over:

var fieldNames = Object.keys(myTest);
fieldNames.forEach(function(name) {
   if (myTest[name] === null) {
      // has been omitted
   }
});

Always use "===" in this cases.

If you need more means of reflection, take a look at Builder.js and its ns property which contains the entire reflected namespace (everything is some instance of ProtoBuf.Reflect.T which fully describes all messages, enums, fields etc.).
