I think this is already supported? Please verify:
diff_package() {
local pkg="${1}"
local max_gentoo_repo_ebuild=$(pquery --max -r gentoo --one-attr path "${pkg}")
local max_tex_repo_ebuild=$(pquery --max -r tex-overlay --one-attr path "${pkg}")
diff -u \
"${max_gentoo_repo_ebuild}" \
"${max_tex_repo_ebuild}"
}

Thanks Arthur, this does the trick.
My only suggestion is that there is no documentation in man pquery(1) about the supported attributes, so this feature is hard to discover and use.
