If I understand correctly they can be saved only if they are in a list of predefined values.
So in theory every university in the world needs to be defined.

As a workaround, maybe it is possible that the map generator concatenates name+"("+operator")" and assign to name in these cases. And implement the proper solution when all the pieces are in place.

Operator tag is already shown in POIs. However, only some type of POIs show operator tag. Also, the values are not limited to a list of predefined values, they can be anything.
