Ability to create multiple windows of same type like multiple log windows with each having checkboxes to choose the category/tag/level of logs.

You can create any number of windows you like. Your code/functions are creating windows..
If you want those windows to have same "visible" name, consult the FAQ about using ## and ### operators inside labels.

Ability to save this kind of windows setup as a new workspace irrespective of the number of windows(of same type).

I don't understand your question. Everything is saved by default.
