We have implemented the Fan Speed trait in Home Assistant: https://github.com/home-assistant/core/blob/dev/homeassistant/components/google_assistant/trait.py#L1050
And it looks like Dyson fans implement the right set_speed supported feature flag and it should be exposing 3 speeds to Google.

Thanks for the response @balloob but I'm thinking it may not be fully implemented for some models or I've missed some configuration somewhere.
Natively the two Dyson fans we have support speed settings as OFF,1,2,..,9,10. That is also how it is controlled in the HA plugin. Should these settings be getting remapped to Low/Mid/High etc. as part of the integration to Google Assistant?

That is already done in Home Assistant.
Can you provide the integration you use and copy the state attributes as seen in the dev tools.

This is a bug in the dyson integration. Home Assistant does not support numeric speeds for fans.
