I can reproduce it easily and consistently in 4.2.0 and 4.2.1 on Linux and Windows.

I'm not able to reproduce this in the 4.2.1 RC with the steps provided. Could be something was different about how your score was set up. To be sure, please save your score in the state after adding the notes but before the Ctrl+Delete, then ZIP and attach it here (after verifying that the bug still exists with that version of the score).

Here is the score I'm having trouble with. (attached)
Select the first minim, press Ctrl+Del and the key-sig disappears.
Press Ctrl+Z, and the minim reappears, but not the key-sig.
