Actually org-modern should work well for many fonts. You shouldn't be restricted in the choice of your fonts, since these are highly dependent on preference. There is no reason in making your font decisions based on org-modern. I suggest you use a font with an overall appearance you are comfortable with. I am quite sensitive to this, not many fonts work well for me since there is so much variety in shape, height, weight, spacing etc.
However depending on your fonts maybe fine tuning to some of the org-modern customization options is required. Please try different fonts you prefer and report back which settings work well for you.
I made good experiences with Iosevka for the symbols. As default font I tried Hack and Iosevka.
