If you're using dinghy then you're using a version of nginx-proxy and so you can follow the documentation there to use multiple hosts.
If you're looking to run multiple versions of Magento I recommend using separate containers. If you don't want to do that then you can just treat this image like a generic PHP FPM container and do what you want by mounting configuration files into the correct places such as adjusting the nginx configuration in the nginx container.
