Indeed, it might not be an issue with the version from March 10th itself, but more with the upgrade process.
As such, after running :

flatpak run --branch=stable --arch=x86_64 --command=eclipse --file-forwarding org.eclipse.Java -clean

Then, eclipse could start even from the March 10th version (no need to revert).

Seems to be fixed after running:
