High Order function will do the job for you. Try for example to create a function similar to this one const collapse = numberOfCollapse => collapsed => console.log(numberOfCollapse)
and for each collapse pass the above function with an id for your collapse as first parameter to the onToggle prop and you will see in the console that you log the id of the collapse when collapsed.
<Collapse onToggle={collapse(1)}>
<CollapseHeader>
<View>
<Text>Click here</Text>
</View>
</CollapseHeader>
<CollapseBody>
<Text>Ta daa!</Text>
</CollapseBody>
</Collapse>
<Collapse onToggle={collapse(2)}>
<CollapseHeader>
<View>
<Text>Click here</Text>
</View>
</CollapseHeader>
<CollapseBody>
<Text>Ta daa!</Text>
</CollapseBody>
</Collapse>
this is for cases that you have pretty much the same behaviour for all your collapse when toggled but if you have different behaviour that means you have different functions passed to the onToggle which allows you to identify which one was toggled.
