after restart I see with tail /var/log/mail.log
...
Oct 2 08:40:06 75d0986c0269 postfix/master[614]: fatal: file /etc/postfix/main.cf: parameter myhostname: bad parameter value: 75d0986c0269.
It seems params were wrongly taken from elsewhere but not the issued command

from iredmail-docker.

seems you are following some old documentation? This is how it should work:

docker run --privileged -p 80:80 -p 443:443 \
           -h HOSTNAME.DOMAIN \
           -e "MYSQL_ROOT_PASSWORD=password" \
           -e "SOGO_WORKERS=1" \
           -e "TZ=Europe/Prague" \
           -e "POSTMASTER_PASSWORD={PLAIN}password" \
           -e "IREDAPD_PLUGINS=['reject_null_sender', 'reject_sender_login_mismatch', 'greylisting', 'throttle', 'amavisd_wblist', 'sql_alias_access_policy']" \
           -v PATH/mysql:/var/lib/mysql \

Specifically, you are missing -h attribut..
