This is a really delayed response, my apologies! If you are still wondering about themes, in app.scss on line 5 you can change the theme manually, but this would of course require forking the project to accomplish this.
We wanted to get to more modular CSS but never quite got around to it. If anyone wants to help facilitate that via a pull request, I'm happy to take a review and merge it in.
