Also, saw #535 but I think my problem is on a deeper level, because of the inability to communicate with the K8S API

I don't see anything about checking the logs from the VPC CNI itself. Is it even working? Did you deploy the AWS CPI as well? I believe that is required for the VPC CNI to look up instance metadata from the node object?
This all sounds like failed deployment of the AWS components, not anything related to a defect in k3s. Converting to a discussion.
