Also, maybe a bit more general, for PUT and POST wouldn't it be a good idea to have something similar to interpret-post-result? As now it is impossible to return a custom response.

Yes, definitely. The only reason PUT and POST don't have
interpret-post-result is because I've been focussing on getting GET right.
The ability to return a Response record with explicit status/headers/body
seems right too.
