After reading some more of your documentation I found IntoResponses which can be called like this. In my case I had to use ToResponses and then override IntoResponses for my struct like this.

pub struct HttpError {
    pub time: String,
    pub status_code: String,
    pub error_type: ErrorResponse,
    pub reason: Option<String>,
}

impl IntoResponses for HttpError {
    fn responses() -> BTreeMap<String, RefOr<Response>> {
        ResponsesBuilder::new()
            .response("401", ResponseBuilder::new()
                .description("JWT invalid or missing")
                .content("application/json",
                         Content::new(HttpError::unauthorized("JWT missing or invalid")))
            )
            .response("403", ResponseBuilder::new()
                .description("")
            )
            .build()
            .into()
    }
}

This is a great trait to handle common errors which are always the same!
