Yes it is possible to get a sub-sub-domain. There is only one limitation, Cloudflares Universal SSL won't work. So you will have to request "docs.lips" : "yourdocsrepo.github.io/yourdocs" //noCF and wont get https:// from Cloudflare but you can get it from Github by enforcing HTTPS in the repo settings.
(the option should be available for you when the CF proxy is disabled)
To have a seperate repo is not optional but required. Github supports only one CNAME record per repo. So you will definitely have to use an additional docs repo.
