I also would like to have a complete "new user registration" process, for which we need the email.
I've already have got all the code in Tatami, it's mostly a matter of putting this back into JHipster.

In the latest (0.0.21) version I added basic mail support:
- SMTP server configuration (in properties files, but we might want to move it into the database?)
- Mail sending (in basic text, no templating at the moment)
- Sending can be asynchronous
For templating, yes Thymeleaf is the logical solution (as I also want Thymeleaf for the JSP pages, in case people don't want to have only AngluarJS everywhere)

The current version is working OK, without templating, so I'm closing this now.
Templating is another, more complex issue, as the more I use AngularJS, the less I see the need to have Thymeleaf integration....
