Did some further digging into some other issues posted on the main Gatsby project & found the culprit. Removing gatsby-plugin-offline from my config did the trick. Need to read into why exactly it was blocking the rendering, but all is well for now. Closing out!

To clarify, my pages/index template renders normally. When I navigate to one of my dynamically created routes using templates/fooTemplate.js, the source changes to the above snippet.
