If a client asks for a known data type from DVID, say a grayscale8, it should know what to expect and optimizations it can make. The client can check if its assumptions are correct, and if not, it should throw an error. Since the metadata information will be used for potentially many other data types, e.g., a multispectral volume that really does have a float32 value interleaved with a uint8, I'd prefer to leave it as is and just have the client choose to support certain data types or not.
Regarding channels vs values, I had a discussion with Christopher Bruns on the best name and that's what we came up with and "channels" were considered. Feel free to ping him.
