You have to point erlang to the plugin-files. While I haven't produced a patch yet, this is the manual fix for you:
ERL_FLAGS='-pa /usr/local/src/build-couchdb/build/lib/couchdb/plugins/geocouch/ebin' /usr/local/src/build-couchdb/build/bin/couchdb
Adjust the directory to your structure. Of course you can include this line into the env.sh script, add it to the init.d-script or to your user shell, depending on how you're starting couchdb.

Thanks @alappe, works great! From the build directory I can just do:
ERL_FLAGS='-pa build/lib/couchdb/plugins/geocouch/ebin' build/bin/couchdb
It looks like right now, build-couchdb just skips patching up couch_tests.js (which isn't really necessary for normal use) and since it doesn't include a run script just needs to be started using the "Run CouchDB with GeoCouch" step in the main instructions. Thanks for narrowing it down for me!
