Well, spent a few hours to find how to do that, it seems to be really difficult...
It looks like the SlateApplication tick in another thread that the plugin, so changing the theme while it's ticking result in a EXCEPTION_ACCESS_VIOLATION.
I tried finding way to disable ticks in EngineLoop, SlateApplication, SWindow, but had no luck...
If someone knows a feature in the editor that redraw the interface or close/re-open all windows, that could help a lot.
I'm putting this as rejected in the meantime...
