This is a bug, as there should always be a default launch configuration. This bug has been fixed, and the bugfix will be included in our 2.1 release happening in the next week or two. However, you can actually get this bugfix right now by updating FEBioStudio to the latest development version by following the instructions in this link. Now that FEBio is on version 4, the command to run the solver is now febio4. I need to update the help article that you referenced. Let me know if you're still running into any issue.
