If the created subdomain is literally *.something.tld, then yes, things won't work. I personally didn't know this was possible in cPanel.

Sure, just test it. It is no problem to setup an domain like *.tld.com in default cpanel config

We do it when there is wildcard SSL needs to be installed for specific domain.

*.domain.tld is obviously translated by cPanel to something else. But there is no Apache or Nginx rule that can hold *.domain.tld as a valid domain definition. Sorry.
