Would the people living there die in the fires. Steal wood to build refuge camps and be less efficient at their job until a new hut is built. Leave town? The 2nd option would likely require more stat tracking for individual citizens, so unless someone else is doing that then the residents just leaving might be the easiest.

The people could just scatter back into the wilderness. Or die. Villagers die from wild beast attacks. Some combination of both.

I think that this would be a good idea. I would not limit it to huts though. Any building can burn. a similar set up to the one for traps and villager deaths should work,
