This problem with the background color not changing/getting updated on the Entry control is being caused by a bug in the Entry control for .NET MAUI. Apparently, this problem has existed for a long time.
As a workaround, I'm wrapping each Entry control inside of a Border control. Then I set the background of the Entry control to Transparent, and I configure the DataTrigger to change/update the background of the Border control instead.
This is probably much less efficient, and it requires more work. However, it does produce the intended effect!
As this issue isn't directly related to this repo, I'm now closing it.
