After doing a little more research, I believe Swashbuckle should still work in a WebAPI 2 project. The Swashbuckle project itself references the older (4.x) assemblies but I believe these should be compatible with 5.x.
I created a WebApi 2 project, pulled in the existing Swashbuckle package, and fired up the Swagger page without issue. Could you pass on a screenshot of the error you see when trying to view the swagger UI?
Could it be a general issue in getting Swashbuckle wired-up and not actually related to the WebApi version? I just added some troubleshooting steps to the readme ... might be worth giving these a try
