The reason why I stick to the v3.6.0 is that this version has hand-crafted optimizers per device per hashing algorithm, and the cracking speed is slightly better than with the newer versions, at least in WPA handshakes cracking (mode 2500). Although now I see the difference becomes narrower with each hashcat minor update.
I'll take a closer look. For now, you can easily change the version you want in dockerfile with HASHCAT_VERSION env.

2 days ago hashcat v5.0.0 is released. Even though the direct cracking speed is slightly lower than in v3.6.0, the new functional pays off greatly.
I've already switched to the latest release. You can check it out once the dockerhub builds latest changes.
