Good question. Is there any data available or attempt documented to add other coins?

The current firmware / hardware will work as-is with any coins using the same elliptical curve as Bitcoin (secp256k1). The issue is then integrating coin support into a client desktop app. An API to use the device, along with some tips, is published here: https://shiftcrypto.ch/api
We will not add specific coins into our desktop app at this time, but forks are welcome as long as our branding is removed - https://github.com/digitalbitbox/bitbox-wallet-app. LTC is already in the desktop app and can serve as an example.
Alternatively, the BitBox is also supported in the Electrum client, and others have forked Electrum for different coins in the past.
I'll close this as the issue is not firmware related but client app related.
