You will need to modify source for this, but this should be pretty simple. When you call html5Upload.initialize({ ... }) it returns UploadManager instance. UploadManager has data property which you can update at any time. All this data will be included with the upload:

var manager = html5Upload.initialize({ ... });

// When settings changes, just update data:
manage.data = { settingA: 'updatedValue' }
