I think I may found a workaround to get this installed anyway
I just assumed that doctrine/instantiator version is the problem. A clean ZE installation will have this packaged installed by default, and it is required by phpunit/phpunit.
So first I removed phpunit from composer.json and run
$composer updateAfter that I can successfully install this package
Next step, you can add phpunit back
$composer require --dev phpunit/phpunitand it installs without problems for me
Still not enlightened about what actually happened with the library versions. Probably a bump to doctrine/orm dev version should work as suggested in the pull request.
