Hey @smeedijzer-internet , I thought of this when building it.
I still like the idea, perhaps even preferring it to removing the field to be honest. I would like to get others thoughts on this too. If I am to offer both, do you have a suggestion for the config file API to alternate between removing/read-only?

@smeedijzer-internet FYI.
Been thinking about it more, and perhaps setting an application
option should make the field readonly, and then the user can still remove the field by using an wp-admin
option. That allows both options, and feels logical without overly confusing the API. Thoughts?
For example, application.general.site-title
sets and makes it readonly, and wp-admin.{role}.settings.general.site-title
removes the field.

I tested changing the fields to disabled and it felt much better, so application options now disable fields rather than removing. You can still use wp-admin
to remove the fields.
Thanks for the suggestion @smeedijzer-internet
